Homemade Granola

Good afternoon Folks

Several of you asked for the Granola recipe so here it is. I did tweak it as I had read quite a few recipes online, and felt it was a forgiving recipe, meaning you could basically add this or that as you wish. I have a little cookbook called ‘The Quaker Oats Wholegrain Cookbook’, I ended up using their recipe changing it up a bit. I think you could do almost anything with a granola recipe and have it taste great

Golden Granola

3 cups Quaker Oats (quick or old fashioned, uncooked
1 cup shredded or flaked coconut
1 cup coarsely chopped nuts ( I used 1/2 c. sesame seeds and 1/2 cup pumpkin seeds)
1/4 cup honey ( I used maple syrup not the real stuff either, just pancake syrup)
1/4 cup butter or margarine, melted ( I used light olive oil instead of butter)
1 1/2 tsps. cinnamon ( I didn’t add that)
1/2 tsp. salt ( I left this out too)
2/3 cup raisins ( I used a couple of handfulls of craisins and a handful of dried cherries and berries)

I also added 2 small scoops, maybe a couple of TBS. of flax meal. You could add more and I read online that some people add wheat germ.

Combine all ingredients except dried fruit in a huge bowl; mix well. Pour into an ungreased shallow baking pan and bake in preheated moderate oven (350 degrees) 25-30 minutes or until golden brown, stirring occasionally; stir in dried fruit. Cool thoroughly; store in tightly covered container in cool dry place or in refrigerator. Serve as cereal with milk or as a snack. Makes 6 cups.

We eat it as cereal. I use a mix of the granola and cornflakes. I put on a dollop of plain yogurt and then add milk. When we have bananas I slice them up and add them on top.

It was easy, smelled delicious while baking and is great to eat and healthy. Be adventurous making granola your own way.

I know 'granola' needs the fat and honey, but after battling to clean grungy baking trays - I make muesli. Add the honey in the serving bowl. Also the coconut, nuts, seeds, flax are added for their natural oils, so shouldn't be baked ... Who needs salt! But the spice smells glorious while it is baking.

That is much like what I make, only I use Canola instead of butter.

Your breakfast sounds so healthy and yummy! I must try to make some of this. I didn't even know you could make granola. I'm a store bought kind of gal I guess but do love homemade.

Wonder if I don't have that same cookbook??? Is it paperback & about 3-4" tall and maybe 6-7" wide? There were a few recipes I made so often the book fell apart on me! I'd almost forgotten about it until I saw your granola.

When it's cool enough to think about using the oven, I think I'll bake a batch :)
