Danish Puffs and a Great visit

What a great visit we had with our NC cousins today. We are thankful for reconnecting with DH's cousin, and meeting his wife for the first time and thankful we were able to have two visits with them in the last week.

I did see a few things I forgot to dust and some cobwebs too. :-) Didn't catch it all, but that's ok. We talked, laughed and enjoyed each others' company.


For lunch we took them to the Publix Deli for their delcious hoagies/submarines. We think they make the best ones around. They hadn't had hoagies in ages and really enjoyed these. If any of you have a Publix grocery store in your area, do check out their hoagies. You won't be disappointed. DH and I always split one.

Yesterday I made Danish Puffs to have with coffee this morning and thought I would share the recipe and a picture of them here.



DANISH PUFF


1/2 c. butter, softened
1 c. all-purpose flour
2 T. water
1/2 c. butter
1 c. water
1 tsp. almond extract
1 c. all-purpose flour
3 eggs
Powdered Sugar Glaze
chopped nuts (optional)

Heat oven to 350°. Cut 1/2 c. butter into 1 c. of flour until particles are size of small peas. Sprinkle 2 tablespoons water over flour mixture; mix. Gather pastry into a ball; divide into halves. Pat each half into rectangle, 12x3-inches, on ungreased cookie sheet. Rectangles should be about 3 inches apart. ~ Heat 1/2 c. butter and 1 c. water to rolling boil; remove from heat. Quickly stir in almond extract and 1 c. flour. Stir vigorously over low heat until mixture forms a ball, about 1 minute; remove from heat. Add eggs; beat until smooth and glossy. Spread half of the topping over each rectangle. Bake until topping is crisp and brown, about 1 hour; cool (Topping will shrink and fall, forming the custardy top.) Spread with Powdered Sugar Glaze; sprinkle with nuts. Makes 2 coffee cakes (5-6 servings each.)

Powdered Sugar Glaze
1 1/2 c. powdered sugar
2 T. butter, softened
1 1/2 tsp. vanilla
1 to 2 T. warm water

Mix powdered sugar, butter, and vanilla. Stir in warm water, 1 teaspoon at a time, until glaze is of desired consistency.

I made this recipe into 12 individual rounds, using a heaping tsp. of the dough patted out into about a 3 inch circle, then mounded on a heaping tbs. of the custard. Bake for 30 minutes.

I also didn't have almond flavoring this time, so used half and half of vanilla and orange extracts. Delicious!

Last night I was really pooped from 'home caring' and told DH I would just wash the dishes in the morning. He looked at them, and said I'll do them right now, and he did just that and I was so thankful and told him so several times. It was a happy ending to all the flurry of activity around here.

Oh, you'll never guess, I'm making the Danish puffs for supper tonight! They looked so good, I couldn't resist. I'll let you know how they turned out. (And to think, the recipe is in my old Betty Crocker cookbook, too!)

Glad you had a good visit, FL. It really stresses me when we host parties or dinners because I know, without a doubt, I will see forgotten cobwebs or dust at some point during the night. I agree...Publix has awesome subs, and of course, the world's best fried chicken.

Do these need to be eaten while warm or will they be good the next day if placed in a covered container?
Life is surely about much more than tidy housekeeping--but why is it that someone appears unexpectedly just when housework hasn't been a priority?

Isn't funny how we don't notice the cobwebs or dust until we have company over? The good thing is they were probably so busy enjoying your company they didn't notice a thing.

Flowerlady: Glad that you had a great visit! I often enjoyed the company as well as the relaxing feeling after guests left :) DH is so sweet to help you out. Those danish puffs look so delicious! I am not good at baking. I will check back this post if someday I feel like trying something new!

These look amazing - I am definitely going to make them as I love pastries best! I;ve never heard of Publix and have no idea what a hoagie is - how's that for being a Canadian!?

I always check overhead for cobwebs first....our daughter is a spider fanatic and if there is one on the place, it will show up when she is here!
I think she comes in the house looking overhead....

I am always tired after visits too. Bless your husband for helping you.

What an interesting-sounding recipe. Of course you know I'll have to try it! I wonder if they'd be good with jam swirled on the top instead of the powdered sugar glaze?

It tickles me how well you and your DH get along. If all married people followed your example, there would be a lot less work for attorneys! Really, though, our pastor's message last Sunday was about dying to your self and doing for others and he said it should start at home! He's right, of course. And you and your DH are not strangers to that philosophy.

Glad you enjoyed the visit -- and probably no one noticed the cobwebs but you. Heh! Hugs...

Those Danish Puffs look delicious. I'm glad to hear that everyone enjoyed the visit. Visitors stress me out too, especially since there are particular housekeepers on both sides of the family. Oy. I tend to take swipes at the same thing every day so there's no doubt I miss things. lol

Those look very tasty. Wish I could magically transport them to my house as I just don't have it in me to bake today. Catching a bit of a head cold. So nice that you had some company to brighten the day.
