One of my faithful followers, Glenda, asked for this recipe as I posted about making them the other morning.
It is from the cookbook ‘Southern Living Cookies and Candies’ 1976. I bought it at the flea market in 1989 for 50 cents.
3/4 c. shortening
1 1/2 c. sugar
3 eggs, well beaten
3 c. sifted flour
1 tsp. baking soda
3/4 tsp. salt
1 9 oz. pkg. mincemeat*
3 TBS. water
1 c. broken walnuts
Cream the shortening and sugar thoroughly in a bowl. Add eggs and beat well. Sift dry ingredients together and add half the dry ingredients to creamed mixture. Crumble the mincemeat and add to the egg mixture. Add the water and stir until blended. Add walnuts and remaining flour mixture and mix well. Drop from tsp onto greased cookie sheet. Bake in 350 degree oven for 10-15 minutes.
*One cup canned mincemeat may be substitued for packaged mincemeat. Omit water. I used Crosse and Blackwell, with the rum and brandy. :-)
Makes 4 dozen.
I took some of these to work to hand out and they were enjoyed by all.
