Sunday Lunch

Today is a tad chilly, and partly cloudy so I made Oat Potato Sandwich Bread in the bread machine, and a homemade vegetable/chicken soup. This was our lunch along with a Beck's beer that we split. It was all yummy and homey on this Sunday afternoon.

Below is the recipe for the bread if anyone would like to try it. I sure enjoy my bread machine.

Oat Potato Sandwich Bread

1 1/2 lb. loaf

1 1/4 c. water
1 tbs. olive oil
2 tbs. honey
3 c. bread flour
1/2 c. instant potato flakes
3/4 c. regular or instant oats
1/2 tsp. grated lemon peel
1/2 tsp. thyme leaves
17 grinds on the pepper mill for some pepper
1 1/2 tsp. iodized sea salt
1 1/2 tsp. yeast

Put water, oil and honey in your bread machine. Mix all other ingredients except the yeast, into a bowl, stir around to mix all together. Add to bread machine. Make a little well in the dry ingredients, add the yeast into well. Close the lid. Choose basic cycle and medium crust and start the machine.

Enjoy.

That looks sooooooooo good! It would be perfect for the weather we are having. Cold and gray. I may have to try that in our bread maker. Hope you enjoyed it!

Hi Sharon ~ It was yummy. The soup was really tasty with Italian seasoning and minced garlic, homemade chicken broth, some beef bouillon.

I used to have and use a bread machine and the oat bread recipe was the best. Yours looks wonderful and that soup too, I'll be right over, lol!

Good morning SundayGirl ~ I really enjoy using my bread machine. It does all the work, while I do other things. :-) The house starts smelling yummy too, once the bread starts baking.

SweetBay ~ That was a delicious loaf of bread. I need to make more. I've several different recipes that we really like, and several bread machine cookbooks, with more recipes to try. It is rewarding, even if it isn't done by hand. I enjoy using my machine. Have had it about 8 years now.

The bread and soup both look yummy. I have a bread machine that my parents gave me because they didn't use it. I don't remember to use it, because I don't have room for it in my kitchen. You make me want to get it out soon before the days get warm.

I've been making a lot of soup, and freezing containers to give to my daughter, who has recently found out she's allergic to wheat, soy, and peanuts, and also to take for my lunch at work.

Sue ~ Get out your bread machine. Even in the summer the thing doesn't generate as much heat as the oven.

We just finished the last of a lentil stew I made. It is always good and filling.
