Thank you and recipes

Thank you all for your lovely comments on our anniversary yesterday. I enjoyed the meal preparation, and we both enjoyed the results last night.

Someone asked if we were going to eat outside, or by candlelight, and I have to say no we didn't do either. Right now it's too hot and miserable to eat outside. Our romantic setting was, eating in our two chairs in the living room that are separated by a glass topped coffee table, where our glasses sit, along with condiments or whatever we might nibble on. I did set a pale pink table cloth on the kitchen table with a sheer brown lacy overlay and DH told me it looked pretty. (He gave me the sheer piece years ago and I only bring it out for special occasions because it is so fragile). I took pictures of our dinner on the table. :-)

Every thing was delicious, starting with the margaritas, made with Monte Alban Mescal, key lime juice and triple sec. For tidbits we had Kashi 7 grain crackers spread with cream cheese that I had added black pepper, and powdered onion and garlic to, topped with anchovies. We haven't had either the drink or tidbits in awhile so it was a real treat!!

The lamb was delicious and I will be making it again. The recipe for that dish and the Key lime pie will follow. For the carrots, I picked fresh tarragon from my garden. It is one of my favorite herbs, great with chicken, fish, and vegetables.

Pecan-Crusted Lamb Chops

Pecan-crusted lamb chops with pecans, parsley, rosemary, garlic, bread crumbs, and Dijon or brown mustard.
Ingredients:

* 4 to 6 lamb chops, about 1 1/2 to 2 pounds
* 1/2 cup coarsely chopped pecans
(pecans from Becca)
* 1/4 cup flat-leaf parsley leaves
* 1 tablespoon fresh rosemary leaves or 1 teaspoon dried
(rosemary picked fresh from our gardens)
* 2 medium cloves garlic, chopped
* 1/4 cup bread crumbs, fine, dry, plain or seasoned
* 1/2 teaspoon salt
* 1/4 teaspoon coarsely ground black pepper
* 2 to 3 tablespoons Bold 'n Spicy Brown Mustard or a Dijon mustard

Preparation:
Trim excess fat from the lamb chops.
In a food processor or chopper,
combine pecans, parsley, rosemary, garlic,
bread crumbs, salt, and pepper.
Process until very finely chopped. Transfer to a plate.



Meanwhile, add 1 tablespoon olive oil to a baking pan or roasting pan
which will hold the chops in one layer.
Set oven to 350° and place pan in oven to preheat.

Rub each chop with mustard then place on pecan mixture, turning to coat all sides.
Place in preheated pan in oven and roast
for about 20 minutes for medium to medium-rare,
turning once about halfway through.
Serves 2 to 3.



Cream Cheese Key Lime Pie

Serves 8

This simple recipe makes a 9-inch pie and requires no baking.

Ingredients:

9-inch graham cracker pie crust
1 14-ounce can sweetened condensed milk
1/3 cup, plus 2 Tablespoons of Key Lime juice
8-ounce package of softened cream cheese

Preparation:

Combine milk, juice, and cream cheese in a mixer for 5 to 6 minutes.
Pour mixture into graham cracker piecrust.
Refrigerate until firm.

This morning I went out to clean up some prunings and weeding debris from the other day, plus mowed, and DH trimmed the front hedgerow with electric clippers, while on a ladder. I held the ladder. Now it looks all nice out there and the speed limit sign shows up. It was starting to disappear and I didn't want the county to come along and do a hack job on the hedge by the sign as they have done in the past.

When we were out there we were sweating buckets, it was 87, but with the humidity it felt like 97. We had a longish nap after lunch, both dragged out from our efforts. I know I say this almost on a daily basis, but we are so ready for cooler weather. We have had some nice rain over the past few days and that's been great.

Easter dinner and more


Good evening Folks ~ I hope you are having a good week so far. Since a few of you mentioned our Easter menu, I thought I'd share pictures and recipes here and a couple of rose pictures taken yesterday.

For quite a few Easters now I've been roasting a boneless leg of lamb. We love it. This year, I also fixed mashed potatoes, LeSeur Peas, cooked carrots drained then served with butter and fresh tarragon, for dessert key lime pie with raspberry topping. To start we had a margarita and then merlot wine with dinner. We always drink out of these glasses for Easter. We picked them up at a local flea market many, many years ago for $1 each. One of the glasses is smoky where the rooster is because of air/moisture being able to get inside. I hand wash these for obvious reasons.










As I was taking the dinner plates away, I spied a piece of mashed potatoe left on the plate, and had to take a picture, as I am very partial to hearts of any kind. I thought it was very fitting considering the holiday. God loves us so much He gave himself for us.

Easter Lamb recipe.

Roast Leg of Lamb with Rosemary


Ingredients


* 1/4 cup honey

* 2 tablespoons prepared Dijon-style mustard

* 2 tablespoons chopped fresh rosemary

* 1 teaspoon freshly ground black pepper

* 1 teaspoon lemon zest

* 3 cloves garlic, minced

* 5 pounds whole leg of lamb

* 1 teaspoon coarse sea salt

Directions
1. In a small bowl, combine the honey, mustard, rosemary, ground black pepper, lemon zest and garlic. Mix well and apply to the lamb.


2. Preheat oven to 450 degrees F (230 degrees C).


3. Place lamb on a rack in a roasting pan and sprinkle with salt to taste.

4. Bake at 450 degrees F (230 degrees C) for 20 minutes, then reduce heat to 400 degrees F (200 degrees C) and roast for 55 to 60 more minutes for medium rare. The internal temperature should be at least 145 degrees F (63 degrees C) when taken with a meat thermometer. Let the roast rest for about 10 minutes before carving.


Key Lime Pie with Raspberry Topping

8 oz. cream cheese, softened
14 oz. sweetened condensed milk (not evaporated milk)
1/3 c. lemon juice, fresh or bottled (not lemon extract) (or key lime juice)
1 tsp. vanilla

Beat all together, pour into a graham cracker pie crust and chill for several hours.

I used a can of raspberries, cooked and thickened with arrowroot powder, for the topping.

Today I mowed and weed wacked, which always wears me out. For supper tonight I made home made pizza, always one of our favorites no matter what day of the week I fix it.

Margaritaville at Plum Cottage

Today was my 61st birthday. I have been planning my bday dinner for a few weeks now.

Ever since I was a girl living in So. CA, I have loved tacos. Whenever we had them with family or friends, it was a happy time, so for me tacos is a comfort food and one for celebrations. This year I felt like having them for dinner, along with a margarita and key lime pie for dessert. My boss also gave me avocados from his tree, so I fixed us guacamole to have with corn chips before dinner. It was a nice bday party with my DH. Not only is today my birthday and the first day of spring, I also met my DH on my 17th birthday.

For our margaritas, I used Monte Alban Mescal, you know the bottle with the worm. :-) DH has eaten the worm a couple of times, I have declined. Mescal has a real earthy, buttery flavor. We really like this. I also used Nellie and Joe's Key West lime juice, along with triple sec.

My recipe: 1/2 oz. lime juice, 1 oz. trip sec, 1 1/2 oz. tequila or Monte Alban. Server over ice, in glasses that have been chilled in the freezer for a few minutes then turned upside down to twirl the rims into a bit of sea salt.

Here is the recipe for the key lime pie, which was very easy. There are all different kinds of recipes for this pie, but this was the one I chose to make this year. Cream Cheese Key Lime Pie

Serves 8

This simple recipe makes a 9-inch pie and requires no baking.

Ingredients:

9-inch graham cracker piecrust
1 14-ounce can sweetened condensed milk
1/3 cup, plus 2 Tablespoons of Kermit’s Key Lime juice ( I used Nellie and Joe's Key West Lime Juice)
8-ounce package of softened cream cheese

Preparation:

Combine milk, juice, and cream cheese in a mixer for 5 to 6 minutes.
Pour mixture into graham cracker piecrust.
Refrigerate until firm.
